Good Leftovers

Not to toot my own horn, but I'm pretty impressed with myself right now. I just totally made something up for dinner tonight out of leftovers, and it was awesome! Go me!

I took my leftover pizza toppings - artichoke hearts and black olives - and mixed them with some of my quinoa. Then I added a bit of fresh spinach, and tossed it all with italian dressing. It turned out to be a great cold salad. The only problem I had with it was that it felt a little too vinegar-y for me. Adding a little vegan parmesan seemed to take care of it, though. It would also be great with some sun-dried tomatoes.

Dessert was some Almond Pecan Soy Delicious. As always,when it comes to this stuff, the battle with portion control was a losing one. I can't help but eat too much of it! It's heaven. I knew I should have bought more than one pint...
