Magic Ingredients

There are some vegan ingredients that I have encountered that have totally blown my mind. Every time I discover a new one, I find myself telling people about the amazing "magical" ingredients that I've found. Here's my list so far...

Silken Tofu This stuff is amazing! Before I understood the differences between Chinese-style water packed tofu and Japanese-style asceptic packed tofu, I hated this stuff. I'd try to press it and put it in stir-fries. What a disaster. Now that I know how to use it, I'm absolutely in love. My beloved alfredo sauce would be nothing without it. And I can't wait to try it in a chocolate pudding recipe I found. This stuff is magical!

Nutritional Yeast This is yet another ingredient in my alfredo sauce. And it has added depth to my tofu scrambles as well. Jen calls it "the most vegan ingredient" you can find because only vegans seem to use it. And non-vegans have never even heard of it. But this stuff is awesome. Also, it's really good for you.

Ener-G Egg Replacer This product makes vegan baking a snap. Although there are many other ways of replacing eggs in recipes (arrowroot, flax seeds, tofu, applesauce, etc), this is my current go-to item. Love it.

Onions Okay, this may seem like an odd addition to the magic ingredients, but hear me out. I know a lot of people aren't crazy about onions, and I used to count myself among them. But I've since come to my senses. Although raw onions can be a bit overpowering, sauteed onions make pretty much any savory dish taste amazing. I use them almost every day. Yum.

Bragg's is something I wish I'd known about when I was vegan. It's got a robust flavor - kinda salty so I use it in place of soy sauce - and lots of protein.
