Chocolate Mint Fudge Cake
I found this recipe for Chocolate Mint Fudge Cake on the Whole Foods website months ago. I've even had the ingredient for awhile, but never had the time or occasion to make it. Yesterday I didn't have the occasion, but I did have the time and I was in a baking mood, so I just went for it.
I did all sorts of substitutions with the recipe: soy milk instead of cow's, Earth Balance Buttery Sticks in place of butter, and Ener-G instead of eggs, not to mention using a 10" springform pan instead of a 9"x13" cake pan. Even with all of those changes, it came out great!
Halfway through making it I found out a bunch of friends were playing whiffle ball in the park near my house. So I went and played (my team won, yes!) and afterwards we all had cake. It got rave reviews, including my favorite: "This doesn't taste like a 'vegan' cake!" I think it's fair to expect more desserts like this in the future...

I know you'd never guess, but I fuckin love cake.
Once, me and a friend took a half-eaten vanilla cake on a tour of Chicago. What did we learn? Even if it's old and eaten, people fuckin love cake.
Cake's got no natural enemies, but plenty of natural predators.
