Spinach and Cauliflower Bhaji
I am so glad I had this meal planned out already. Chris and I went on a long bike ride today on and around the North Branch Trail, and we were exhausted when we got back to my place. This was an easy veggie-ful dinner.

I think my food styling could have been a little better, but damn if I wasn't hungry! Anyway, this was really easy, and it was a great use for the head of cauliflower I had. Saute some onions and the cauliflower in a little oil, then add the spices, diced tomatoes, and vegetable broth, and simmer for 8 minutes. Add the spinach and simmer until the cauliflower is tender.
I wish I'd picked up some naan to serve with this, but we made do with more of the Red Hen bread. Yay for carbs!
