Tofu Dill Salad Sammiches

Two posts already this afternoon, and there may be one for dinner tonight, too... I guess all that time not being able to post here has made me a little crazy. :)

This is the Tofu Dill Salad Sammich from Vegan with a Vengeance, served on some of the fresh bread I picked up this morning. It was incredibly easy and incredibly tasty. I *am* kicking for myself for not buying some fresh dill at the market this morning, but even with dried this was fantastic!

On the side is a salad I made up - some spinach, sliced strawberries and avocado, and pecans. I dressed it wih some balsamic vinegar and black pepper. Mmm. For those of you keeping track, this was the first time I cut open an avocado since the incident. It went pretty well. I wasn't too nervous, although I did have to force myself to take the pit out the "right" way. I don't know why I still want to stab it out, but I think I'll learn pretty quickly not to do that ever again. Anyway, it was totally worth it - this was one of the best avocados I've ever eaten!

I just made these tofu dill sandwiches and I was amazed and how easy and delicious they were. I had fresh dill and it made it so aromatic too!
