I had a sandwich with roasted eggplant, tomato, zuchini, and muffaletta on it. Yum! I'm definitely in summer sandwich mode, so this was great. It also inspiried me to think about trying more stuff on sandwiches. I get in a rut when it comes to sandwich filling sometimes, but this was unique and tasty. I think eggplant is something I'd like to conquer soon, too - it really is a vegetarian staple and I haven't even come close to fully exploring it. So I guess in addition to providing me with a really tasty dinner, Bite Cafe also gave me inspiration... Who would have thought?
