Ethiopian Food
Chris and I biked up to Kukulu Market today so I could finally get some ingredients for Ethiopian food. The owners were really nice and pointed me in the direction of the three things I wanted to buy there: injera, berbere spice blend, and teff flour (for making my own injera). As we were riding back to my house, I decided I couldn't wait to use the ingredients, so I decided to make some Ethiopian "wat", or stew, for dinner.

I had access to a few Ethiopian recipes, but didn't have all of the ingredients for a single one. I decided to just try my best with what I had and hope that it would work.
First I sliced one and a half medium onions and put them in a wok to saute with about 2 cups of chopped seitan. After the onions were translucent and the seitan was starting to brown, I put in two minced cloves of garlic. Then I added about two tablespoons of berbere, half a cup of red cooking wine, a splash of vegetable oil, one head of chopped kale, and one drained can of garbanzo beans. Then I covered it and let it simmer for about ten minutes.
Once the kale was wilted and everything else was hot, I spooned it onto a big piece of injera and served it with some extra pieces of injera folded on the side. Now this may not be a traditional Ethipian recipe, but it turned out awesome! Chris and I both completely stuffed ourselves. I'm really excited that it worked out, and now that I have flour to make my own injera I can't wait to try some more Ethiopian dishes!
