Seitan Wrap
Since I made the seitan last night, this came together in less than 10 minutes. Perfect for tonight when I'm completely exhausted. First I sauteed a little onion and a few pieces of the seitan. Then I took a spinach "wrap" and spread a thin layer of tofutti cream cheese on it. I sprinkled on some Spike seasoning, shredded carrots, romaine lettuce and spinach, then the onions and seitan. Roll that baby up and it's a meal!
An even faster version would be to either leave the onions and seitan cold, or just not inlude them at all. I'll probably do something like that for lunch tomorrow...
