Burritos
Last night's dinner was a little rushed as I had to get ready to go watch Project Runway (sidenote: I totally saw Philip and I on screen for split second!), so I didn't have much time to make it pretty. And anyway, burritos are not a generally photogenic food even when you try to pretty them up. And so... I have no pictures.
If they weren't photogenic, at least they were tasty - especially considering I was really just trying to use up some produce I have in my fridge before going on vacation for a week and a half (second sidenote: I'm so excited to go on vacation! I probably won't do a ton of cooking, but I'll try to take pictures if I do.) Okay, back to these burritos - I used flour tortillas, then filled them with some refriend beans, sauteed peppers and onions, tomato salsa, and corn salsa that I made up on the spot. Not bad! I had some plain soy yogurt in my fridge, too, which I was going to use as sour cream, but it turns out it kind of tastes like vanilla, so that was a no-go. Oh well.
I thought maybe I could take a picture later when I had a Soy Delicious cone for dessert, but without an ice cream scoop, it didn't look that great either. Ha.. In any case, I tried the Mocha Fudge. Good stuff.
