Zaru Soba

What do you do when you only have minutes to make dinner? If you're me, you make zaru soba and edamame.

I'll admit, this isn't authentic zaru soba. For one, I don't have the zaru, or bamboo lined tray. And the dipping sauce I made was just soy sauce, wasabi, and scallions, not tsuyu (which usually has bonito flakes). But I did put some shredded nori on top of my chilled noodles, so I figured it was close enough.

The way you eat this can get a bit messy, so I wouldn't recommend wearing your summer whites - you pick up a few noddles with chopsticks, dunk them in the sauce, then slurp them up. I obviously ended up with soy sauce everywhere. :)

Along with that I heated up some edamame. Frozen edamame is so great to have around - toss a handful in a pot of boiling water for a couple of minutes and you have a nearly instant snack.
