Kale and Cannellini Bean Soup

It has been rainy and cool here for the last couple days, and while normally I'd be upset by this (I love the heat!), it provided a nice opportunity to actually cook food. I've realized that when it's warm out I can't do much more than make a salad. But cool weather gets my creative cooking juices flowing again.

I bought some cannellini beans awhile ago, and have been looking for just the right thing to make with them. Several times I've almost made cannellini bean hummus, but I still haven't actually gotten around to it. Last night I finally felt like making something with them - soup!

The soup I created was somewhat inspired by some Tuscan bean soup recipes. As is becoming my norm, though, I made it my own. And it turned out great! The base of the soup was vegetable broth and canned tomatoes, blended with half a can of cannellini beans. The rest of the beans went in the soup whole, along with a bunch of kale and spices. Pretty simple, but so yummy. If it stays cold out, I think my soup addiction will be coming back full force...
