Aloo Gobi
Something about cauliflower always makes me think of curry. One of these days I'll use it in a different way, but for today, Aloo Gobi was the way to go! Oh, and I love that this is the recipe from Bend It Like Beckham! I served it on a bed of whole-wheat couscous. I suppose I should have made some jasmine rice to be more authentic, but the couscous *did* soak up the juices nicely. Mmm.

Here's the recipe. I followed it pretty much to a T. Well, I didn't have diced tomatoes, so I used a can of whole ones, which I then smashed while they were in the pot cooking. Oh, and I reduced the oil a bit. But really, other than that I followed the recipe. :)

It was super simple and very healthy. Maybe the best part is that I got a vegan-food-phobic, curry-disliking friend of mine to try it. And he loved it!
