Another Roundup
Here's some more pictures of things I've made in the last week or so. I apologize for not updating more regularly, but life gets in the way sometimes... I'm leaving for New York one week from today, so I'm not sure I'll have time to post again before then. Or make anything interesting, for that matter. I have to say, though, it has been a fun exercise in improvisaion - make something palatable with whatever is left in the freezer! Ha.

Coleslaw
Shredded cabbage and carrots with some sliced red bell pepper thrown in, too. The dressing is actually a bit of Goddess dressing along with vegenaise, vinegar, and herbs. It turned out pretty good, but I think more dill would have been really nice.

Tofu Scramble and Rosemary Potatoes
My old standby, the tofu scramble. The shredded carrots were really good in this - I can't believe I'd never put them in before! Fried rosemary potatoes are always delcious, too.

Mexican Tomato and Bean Stew
Originally I was going to make tacos, but my "filling" was a little too juicy. Instead of trying to cook it down a bunch, I decided to add a little water and call it stew. It was amazing. Cannelini beans and a can of diced tomatoes make up the bulk of it, then I threw in a bunch of spices - cumin, oregano, chilli powder, salt, pepper... Probably some more, too, but I can't remember now. :) The finishing touch was the avocado. It was technically just garnish, but it really elevated this simple dish into something fantastic.
Then Friday my friends threw a vegan potluck going away party for me. It was incredible!

I know the picture is dark and blurry, but the lighting conditions weren't great. On the table we have (from top to bottom): Rice crispy treats, quinoa salad, lasagna, pesto with shells, sushi, bread with tapenade, and a farfalle dish with gravy on the side. Oh, and some oreos in the glass jar!

The rolls are filled with sushi rice, carrots, cucumber, and avocado. The nigiri were a last minute addition as I had some leftover rice, but didn't want anymore rolls. I steamed the carrots for a couple minutes so they'd be tender. I love how the carrots look a bit like salmon, and the cucumbers are maybe... yellow tail? I was also pretty proud of my ginger and wasabi rose. :)

You definitely should be a vegan chef! I just happened on your site while researching an art project. I've been vegan for about 7 years. I wish the chefs in some of the "Vegan" restaurants were as creative as you.

I stumbled across your site through a Google search, and all I have to say is...wow!
Your food looks delectable, and most of it is healthy, without the usual "vegan" replacers, and easy to make!
I am only a lacto-ovo, but your blog is inspiring me to make the switch to veganism, and soon!
