It's Official
I'm really really excited. The Natural Gourmet seemed like a perfect fit for me from the moment I read about it, and after visiting this summer, I knew I wanted to apply. I just got my big envelope in the mail a few days ago, so now I know - it's official!
And now you know why I haven't been posting much - between the holidays, the relatives, the parties, and the massive amounts of preparation that are going into moving to New York, I have had basically no time to blog. I have squeezed in a few home-cooked meals, though.
Un-Mac 'n' Cheez
Using Dragonfly's Bulk Dry Uncheese Mix mixed with unsweetened soymilk.

Veggie Wraps
Even in the winter I love these. Tortillas, hummus, romaine, red peppers, shallots, mushrooms, and alfalfa sprouts. Mmmm. I put some kalamata olives in sometimes, too. Delicious.

Curried Vegetables with Tofu
From my brand new cookbook, 125 Best Vegan Recipes. Had a few substitutions in there because of what I had on hand.

And finally, a couple pictures of a scarf I knitted for my friend Jen for Christmas. I'm so happy with how it turned out!

I'd admired the pattern for awhile, so I knew I had to make it!

Congratulations Lauren!!
I found your blog through a link in another and enjoy reading it when I have time. Drawn to your blog in particular because of the Chicago references... I grew up in Evanston (about 4.5 blocks from Blind Faith, to be more exact). My home is DC now -not nearly as vegan friendly as Chicago, but I still make it back to the windy city -to see family/friends or for work and I'm always looking for restaurant suggestions.
I hope you will continue to blog while in school... it would love to hear about your fabulous culinary creations.
