        <![CDATA[<p>I'm living in Astoria now, and one of my favorite restaurants is <a href="http://gowasabi.com/">Gowasabi</a>.  It's a Korean/Japanese place and since they don't actually have that many vegan options I get the same thing pretty much everytime.  But those things are amazing.</p>

<p>This is their <a href="http://en.wikipedia.org/wiki/Kimchi">kimchee</a> and miso soup.  This kimchee is on my list of top ten favorite foods right now.  It's so good, I want to marry it.</p>]]>
        <![CDATA[<p>Here's a closeup of the vegetable gyoza (aka potstickers, aka dumplings).  They're pan-fried and served with a very light and slightly sweet dipping sauce.  Also, I think it's hilarious that they serve them on a doily.</p>

It's really a very simple dish, but I love the korean chili sauce they serve with it at Gowasabi.  It's a really satisfying meal.</p>]]>

<p>It's hearts of romaine, beets, hearts of palm, and radishes in lemon vinaigrette, then topped with <a href="http://en.wikipedia.org/wiki/Hijiki">hijiki</a> caviar.   Fancy, huh?  But wait, there's more...</p>]]>

<p>The entree: Sweet potato stuffed shells in a garlic cream sauce, with swiss chard, thyme-scented fava beans, seared artichoke hearts, and oyster mushrooms.  I really loved how the cream sauce came out for this.  I sauteed several cloves of minced garlic, then whisked in soy milk*, salt, white wine, and nutritional yeast.  I finished it off with some arrowroot to thicken it up.  Simple but delicious!  </p>

<p>*It's absolutely necessary to use UNSWEETENED soy milk for things like this.  The vanilla or even "original" flavors are way too sweet and will make the whole thing taste pretty terrible.  Just FYI.</p>

<p>And now for my boyfriend's favorite part of the meal - peanut butter ice cream in a chocolate box.</p>

<p>This was really fun to make.  I melted some vegan chocolate chips with a little soy milk, then spread it out on a sheet tray.  After sitting in the freezer for about 10 minutes I took it out and cut it into squares.  Then when it was time to put the boxes together I just waved the edges of each square near a flame to melt them so they'd stick to the other sides.  It worked like a charm!  And really, you can't go wrong with chocolate and peanut butter.</p>]]>

        <![CDATA[<p>Soooo.  Been a little busy in the last year.  :)  And then I had some technical dificulties with the site so I couldn't update for a bit.  But now it looks like I'm back!</p>

<p>The last year, in bullet point format:</p>

<p>- I attended and graduated from The Natural Gourmet Institute for Health and Culinary Arts<br />
- I met tons of cool people in culinary school<br />
- I learned tons about food<br />
- I met an awesome dude who is into awesome vegan food<br />
- I did an internship at Millennium Restaurant<br />
- I really didn't do a whole lot else</p>

<p>I'm in the process of creating another <a href="http://laurensveganjournal.wordpress.com/">blog</a>, too.  For now the content is pretty much what you have come to expect here.  Only difference is that it's hosted by Wordpress.  You could call it "Lauren's Vegan Journal 2.0." Some might even call it "Lauren's Vegan Journal EXTREME" (har har).  I might just keep both blogs going and do a different focus for each. Who knows.  In any case, I'm ready to get back on ye olde internets and let the world know what's new with me.  Hope you're ready, too!<br />

        <![CDATA[<p>Dear Readers (or what's left of you),</p>

<p>I'm back!  Well, sort of.  I've been in New York for four weeks now and things are finally starting to fall into place.  I started a new job that's going well, I'll be moving into my own apartment tomorrow, and I've been in culinary school for three weeks now!  I love it even more than I thought I would.</p>]]>
        <![CDATA[<p>With all the other stuff I've had to take care of, I've barely been able to cook anything.  :(  And what I have made has been pretty simple, seeing as I no longer have access to all of my cookwear, spices, etc.  It's a hardship I knew I'd have to deal with, but it's been more difficult than I thought.</p>

<p>Of course, necessity is the mother of invention.  So with what little money and resources I have, I've actually made some pretty good stuff.  Lately my standard has been some brown rice, steamed vegetables, and a curry-type bean dish that I made up.  I've made it with chickpeas and black beans, and both were delicious.  Basically I start by cooking some onions until they are tender and starting to brown.  Then I add garlic and a bunch of spices - cumin, oregano, coriander, black pepper, and cayenne.  I let that cook for a minute or so, then add a can of beans, some soy sauce, water, and dijon mustard.  Stir it up, and after simmering for about 10 minutes, it's ready to eat.</p>

<p>I think the mustard is what really makes this dish.  It lends a thickness to the sauce, plus it gives everything a nice tang.  Give it a try!</p>]]>

Shredded cabbage and carrots with some sliced red bell pepper thrown in, too.  The dressing is actually a bit of Goddess dressing along with vegenaise, vinegar, and herbs.  It turned out pretty good, but I think more dill would have been really nice.</p>

<strong>Tofu Scramble and Rosemary Potatoes</strong><br />
My old standby, the tofu scramble.  The shredded carrots were really good in this - I can't believe I'd never put them in  before!  Fried rosemary potatoes are always delcious, too.</p>

<strong>Mexican Tomato and Bean Stew</strong><br />
Originally I was going to make tacos, but my "filling"  was a little too juicy.  Instead of trying to cook it down a bunch, I decided to add a little water and call it stew.  It was amazing.  Cannelini beans and a can of diced tomatoes make up the bulk of it, then I threw in a bunch of spices - cumin, oregano, chilli powder, salt, pepper... Probably some more, too, but I can't remember now.  :)  The finishing touch was the avocado.  It was technically just garnish, but it really elevated this simple dish into something fantastic.</p>

<p>Then Friday my friends threw a vegan potluck going away party for me.  It was incredible!<br />

I know the picture is dark and blurry, but the lighting conditions weren't great.  On the table we have (from top to bottom): Rice crispy treats, quinoa salad, lasagna, pesto with shells, sushi, bread with tapenade, and a farfalle dish with gravy on the side.  Oh, and some oreos in the glass jar!<br />

The rolls are filled with <a href="http://japanesefood.about.com/cs/sushirecipe/ht/ht_sushirice.htm">sushi rice</a>, carrots, cucumber, and avocado.  The nigiri were a last minute addition as I had some leftover rice, but didn't want anymore rolls.  I steamed the carrots for a couple minutes so they'd be tender.  I love how the carrots look a bit like salmon, and the cucumbers are maybe... yellow tail?  I was also pretty proud of my ginger and wasabi rose.  :)</p>]]>

        <![CDATA[<p>I've had no time to go to the store recently, so dinners have really been a good exercise in using my imagination with ingredients I have on hand.  This week I remembered that I'd bought a spaghetti squash awhile ago, and finally decided it was time to make it.<br />

        <![CDATA[<p>I pierced the squash with a fork, then put it in the microwave for about 15 minutes, turning it periodically.  After it was done, I let it sit for a good 10 minutes to cool down - it gets very hot!  When it's cool enough to handle, you just cut it in half, take out the seeds, and use a fork to pull out strands of the squash.</p>

<p>The "sauce" just kind of came to me.  I started with the onions - normally I'd chop up a big yellow or white onion, but since I had neither I went with what I did have - shallots and red pearl onions.  This ended up probably being even better in the end  because they are both sweeter and milder than the big onions.  </p>

<p>So I started the sauce by sauteing the onions in olive oil.  Then I added a few cloves of minced garlic and one big, diced tomato.  I simmered that for a few minutes, then added some canned, quartered artichokes, diced kalamata olives, and oregeno and basil.  I finished it up with a bit of salt and pepper, then piled it onto the spaghetti squash.</p>

<p>This turned out SO good.  I think I could easily make and eat this every week.  Delicious!</p>]]>

        <![CDATA[<p>I'm really really excited.  <a href="http://www.naturalgourmetschool.com/">The Natural Gourmet</a> seemed like a perfect fit for me from the moment I read about it, and after visiting this summer, I knew I wanted to apply.  I just got my big envelope in the mail a few days ago, so now I know - it's official!</p>

<p>And now you know why I haven't been posting much - between the holidays, the relatives, the parties, and the massive amounts of preparation that are going into moving to New York, I have had basically no time to blog.  I have squeezed in a few home-cooked meals, though.</p>

<p><strong>Un-Mac 'n' Cheez</strong><br />

        <![CDATA[<p>I'd been planning these for months, and I think it paid off.  Everyone seemed to think they were lovely AND delicious.  Perfect!</p>

<p>I actually only used two recipes for these: <a href="http://www.recipezaar.com/33995">This basic recipe</a>, to which I added flavorings, and <a href="http://www.browniepointsblog.com/2006/02/10/pomegranate-truffles-shf16/">this recipe</a> for the pomegranate ones.  They were actually pretty easy to make, but they were time consuming.  Luckily there are some leftovers so I get a treat, too!</p>]]>

        <![CDATA[<p>Christmas is right around the corner, so I've been busy.  Besides the usual shopping, I've been working away on some treats for my friends and family.  Ever the show-off, I've gone a little overboard.  And it's left me with very little time to actually cook normal meals for myself.  With a few shortcuts, though (read: frozen foods!), I've come up with some decent dinners.  <br />

        <![CDATA[<p>Last night I sauteed some seitan and mushrooms in olive oil and Marsala wine.  On the side are mixed vegetables with <a href="http://www.anniesnaturals.com/Pages/nutrition/diet.htm">Annie's Goddess Dressing</a>.</p>

<p>I made this whole thing in about 15 minutes.  Yep, start to finish.  All I really had to was slice the mushrooms, then toss them in a pan with some olive oil, Marsala wine, and some frozen chunks of seitan.  A little salt and pepper and it was done!  The veggies were frozen, too, so I threw them in the steamer.   A little Goddess dressing was the perfect topper.   </p>

<p>Speaking of Goddess dressing, before I ever tried Annie's I had several friends rave about how great it was. I couldn't wait to get my hands on some.  When I finally did, I was underwhelmed.  I thought the tahini flavor was too strong.  Or maybe not too strong, but I just didn't love the flavor of tahini.  I think it can be a little bitter and a little chalky.  After the first two salads, though, it started to grow on me.  Now I'm addicted!  I still like to make my own dressings, but in a pinch, this is really yummy.  I think it's particularly suited to a cold green salad, but it was really good on hot vegetables, too.</p>]]>

        <![CDATA[<p>And guess what?  They are amazing together, too.</p>

<p>I don't buy too many "prepared"  vegan foods, but every so often I get a craving.  Lately I've been jonesing for some <a href="http://www.tofutti.com/btcc.0.asp">Better Than Cream Cheese</a>, and since they now make a non-hydrogenated version, I don't feel bad indulging.</p>

<p>Tonight, along with the tofutti, I decided to use some of the <a href="http://www.gourmetsleuth.com/chipotle.htm">chipotle peppers</a> I've had in my cupboard for awhile.  If you haven't had chipotles before,  you MUST try them.  They are hot (they're jalapenos after all), but their smoky flavor is to die for.  By mixing them into some faux cream cheese, you take out a lot of the bite, but still get that barbecue-like flavor.  Yum.  I minced two of the peppers and added them (plus a liitle bit of the adobo sauce) to about 1/4 a tub of cream cheese, and it wasn't too hot by any means.</p>

<p>Of course this would be good on a bagel, but I spread a thin layer on a tortilla, then added some salsa and rolled it up.  It was a bit messy, but it tasted awesome!</p>]]>

        <![CDATA[<p>Something about cauliflower always makes me think of curry.  One of these days I'll use it in a different way, but for today, Aloo Gobi was the way to go!  Oh, and I love that this is the recipe from Bend It Like Beckham!  I served it on a bed of whole-wheat couscous.  I suppose I should have made some jasmine rice to be more authentic, but the couscous *did* soak up the juices nicely.  Mmm.<br />

Well, I didn't have diced tomatoes, so I used a can of whole ones, which I then smashed while they were in the pot cooking.  Oh, and I reduced the oil a bit.  But really, other than that I followed the recipe.  :)<br />

        <![CDATA[<p>This weekend I ate out a LOT.  I don't mind, though, because I get some good ideas and inspiration when I eat something other than what I make.  One of the best places I went this weekend was a Persian restaurant called <a href="http://www.noonokabab.com/index.html">Noon O Kabab.</a></p>

        <![CDATA[<p>When I first glanced at the menu, I was glad to see they had some good sounding vegetarian fare, and not just hummus and baba gannouj.  Don't get me wrong, I love those things, too, and I'm sure Noon O Kabob's are great, but a girl cannot live on chickpeas and eggplant alone.  So I thought I'd get the Vegetarian Mix - I'm a sucker for anything with lots of different vegetables and the cinnamon tomato sauce sounds incredible! - but then I saw that the Shirin Polo was "highly recommended."  They describe it as a sweet and sour persian rice.  It sounded good to me, so that's what I ordered.</p>

<p>It turned out to be unlike anything else I'd had before.  The first thing I noticed was how pretty it was!  On a bed of white persian rice were shredded carrots, turmeric-yellow rice, finely grated orange peel and sliced almonds and pistachios.  It's also studded with golden raisins and pomegranate seeds.  It was a perfectly sweet,  light meal for a Saturday afternoon.  Next time I come here I may try something else, but for now I'm adding my own high recommendation for the Shirin Polo!</p>]]>

        <![CDATA[<p>I was mentally going through my fridge and pantry while at work today, anad I realized I had collard greens, black-eyed peas, and sweet potatoes ready and waiting to be consumed.  I thought about making a few separate dishes like when I had the <a href="http://www.laurensveganjournal.org/2006/08/soul_food_weekend.html">soul food dinner</a>, but decided instead to just put everything into a soup.  </p>

        <![CDATA[<p>This vegetable soup is what I ended up with and it was delicious!</p>

<p>****************************************<br />
<strong>Taste of the South Vegetable Soup</strong><br />
1 Tbsp olive oil<br />
1 medium onion, chopped<br />
1 rib celery, diced<br />
1 carrot, sliced<br />
3-4 cloves garlic, minced<br />
4 cups vegetable broth<br />
1 can condensed tomato soup plus equivalent amount of water<br />
1 medium sweet potato, cubed<br />
1 bunch collard greens, trimmed and sliced into bite-size ribbons<br />
1 tsp cumin<br />
1/2 tsp thyme<br />
1 bay leaf<br />
1/8-1/4 tsp cayenne pepper*<br />
1 can black-eyed peas, rinsed<br />
salt and pepper to taste</p>

<p>Saute the onion, celery and carrot in olive oil over medium heat until onion starts to become translucent, about 3 minutes.  Add garlic and saute for 1 more minute.  <br />
Add in vegetable broth, tomato soup and water, sweet potatoes, collard greens, and spices and bring to a boil.  Turn down heat and simmer until sweet potatoes are tender, about 20 minutes.  Remove bay leaf.<br />
Stir in black-eyed peas, salt and pepper.  Enjoy!</p>

<p>* I used 1/4 tsp of cayenne and thought it was plenty hot.  If you like your food less spicy, use the smaller amount, or none if you don't want any heat.<br />

This spices in this broth are subtle, so the real stars in the soup are the vegetables.  Also, you could very easily add a can of diced tomatoes to this instead of the tomato soup if you're so inclined.  In fact, that's what I had planned to do until I realized I had no diced tomatoes in my house!  I improvised by using the condensed soup and it really worked great.</p>]]>

        <![CDATA[<p>Well, I'm just now finishing up all of my Thanksgiving leftovers.  And you know what else I'm finishing?  My shawl!</p>

        <![CDATA[<p>I got the materials for it for Christmas last year, then actually started it mid February.  I didn't knit a stitch this summer, but now that it's cold outside, I figured it was time to start up again.  After a bit of a false start and subsequent pulling out of four rows, I got really into the swing of this.  And after no time, it was done!</p>

<p>Here's a picture that gives a better idea of the textures of the patterns as well as the tweediness of the yarn.<br />

We took a timeout after that.  After we'd both calmed down (and I had put the shawl away) it was as if nothing had happened and we loved each other again.  :)</p>

<p>This was definitely the most complicated thing I've knitted to date, and now I'm excited to keep it up!  In fact, I just picked out a pattern and some yarn for a project that will be a friend's Christmas present.  Hopefully my enthusiasm continues and I can actually finish it in time for the holidays!</p>

<p>Speaking of the holidays, I've also decided on some treats that I'm going to make to give as gifts.  I'm *really* excited about them, but I don't want to give away the secret to any of the recipients.  So I'm keeping mum for as long as possible...</p>]]>
