         <title>Gowasabi</title>
         <description><![CDATA[<p>I'm living in Astoria now, and one of my favorite restaurants is <a href="http://gowasabi.com/">Gowasabi</a>.  It's a Korean/Japanese place and since they don't actually have that many vegan options I get the same thing pretty much everytime.  But those things are amazing.</p>

         <title>Anniversary Dinner</title>
         <description><![CDATA[<p>I decided to cook a  meal for my boyfriend on our one-year anniversary.  I think it came out pretty nice, especially considering I refused to follow any recipes.  Gotta work on that.  Here's the appetizer.  I call it the "Heart-Beet Salad."  </p>

         <title>Hey everybody!</title>
         <description><![CDATA[<p>Soooo.  Been a little busy in the last year.  :)  And then I had some technical dificulties with the site so I couldn't update for a bit.  But now it looks like I'm back!</p>

<p>The last year, in bullet point format:</p>

<p>- I attended and graduated from The Natural Gourmet Institute for Health and Culinary Arts<br />
- I met tons of cool people in culinary school<br />
- I learned tons about food<br />
- I met an awesome dude who is into awesome vegan food<br />
- I did an internship at Millennium Restaurant<br />
- I really didn't do a whole lot else</p>

<p>I'm in the process of creating another <a href="http://laurensveganjournal.wordpress.com/">blog</a>, too.  For now the content is pretty much what you have come to expect here.  Only difference is that it's hosted by Wordpress.  You could call it "Lauren's Vegan Journal 2.0." Some might even call it "Lauren's Vegan Journal EXTREME" (har har).  I might just keep both blogs going and do a different focus for each. Who knows.  In any case, I'm ready to get back on ye olde internets and let the world know what's new with me.  Hope you're ready, too!<br />

         <title>I&apos;m Back!</title>
         <description><![CDATA[<p>Dear Readers (or what's left of you),</p>

<p>I'm back!  Well, sort of.  I've been in New York for four weeks now and things are finally starting to fall into place.  I started a new job that's going well, I'll be moving into my own apartment tomorrow, and I've been in culinary school for three weeks now!  I love it even more than I thought I would.</p>]]></description>

         <title>Another Roundup</title>
         <description><![CDATA[<p>Here's some more pictures of things I've made in the last week or so.  I apologize for not updating more regularly, but life gets in the way sometimes...   I'm leaving for New York one week from today, so I'm not sure I'll have time to post again before then.  Or make anything interesting, for that matter.  I have to say, though, it has been a fun exercise in improvisaion - make something palatable with whatever is left in the freezer!  Ha.</p>]]></description>

         <title>Mediterranean Spaghetti Sqash</title>
         <description><![CDATA[<p>I've had no time to go to the store recently, so dinners have really been a good exercise in using my imagination with ingredients I have on hand.  This week I remembered that I'd bought a spaghetti squash awhile ago, and finally decided it was time to make it.<br />

         <title>Fastest Dinner in the West</title>
         <description><![CDATA[<p>Christmas is right around the corner, so I've been busy.  Besides the usual shopping, I've been working away on some treats for my friends and family.  Ever the show-off, I've gone a little overboard.  And it's left me with very little time to actually cook normal meals for myself.  With a few shortcuts, though (read: frozen foods!), I've come up with some decent dinners.  <br />

         <title>Aloo Gobi</title>
         <description><![CDATA[<p>Something about cauliflower always makes me think of curry.  One of these days I'll use it in a different way, but for today, Aloo Gobi was the way to go!  Oh, and I love that this is the recipe from Bend It Like Beckham!  I served it on a bed of whole-wheat couscous.  I suppose I should have made some jasmine rice to be more authentic, but the couscous *did* soak up the juices nicely.  Mmm.<br />

         <title>Noon O Kabab</title>
         <description><![CDATA[<p>This weekend I ate out a LOT.  I don't mind, though, because I get some good ideas and inspiration when I eat something other than what I make.          <title>Taste of the South Vegetable Soup</title>
         <description><![CDATA[<p>I was mentally going through my fridge and pantry while at work today, anad I realized I had collard greens, black-eyed peas, and sweet potatoes ready and waiting to be consumed.  I thought about making a few separate dishes like when I had the <a href="http://www.laurensveganjournal.org/2006/08/soul_food_weekend.html">soul food dinner</a>, but decided instead to just put everything into a soup.  </p>
